Every spring since 1927 the Harlow family has gone to the sugarbush to produce some of the best Maple Syrup in southern Vermont. Forty gallons of pure maple sap go into making every gallon of maple syrup. Maple candies are made by taking pure Vermont Maple Syrup and boiling even more of the water away. The Maple Sugar that is left can then be poured into molds to make Maple leaves, hearts, letters, and other interesting shapes and designs. Maple Syrup can also be boiled down and then beaten to make a thick Maple Cream. Great on hot toast or English muffins.
